Mexican Style Loaded Fries with Vegan Chicken Mince

I can give or take loaded fries as a side dish, but as a complete meal, when home made?

There’s something about freshly cooked loaded fries, before the chips at the bottom have a chance to become soggy that really appeals to me. I’m not a fan of loaded fries on the side of a burger for example – that just seems like too big of a meal for my liking. Anyone else like that?

This was a ‘cleaning out the fridge’ meal, as I like to call them. No real recipe, but I was overdue a food shop by quite a few days, and had a few bits and bobs hanging around in the fridge that needed using up. When I say bits and bobs, I really didn’t have a lot to work with – less than half a red pepper, a solo onion and the tiniest bit of red cabbage that was about a week past it’s best. I also had a couple of potatoes that were threatening to turn green if I didn’t use them up immediately..

Cue, loaded fries for lunch!

The first thing I did was wash, chop and air fry some potatoes. Mine look a tad underdone as I’m impatient, and I was confident they’d continue cooking in the oven. Note to self, they could have done with an extra 5 minutes in the air fryer.

While the chips were doing their thing, I finely diced the remains of my red pepper and onion and pan fried them with the VFC plant chicken mince (around 3 syns for half the pack).

I threw in some spices – oregano, ground cumin, smoked paprika, onion salt and garlic granules. With hindsight, I could have made this less dry by using some chopped tomatoes, but serving it with ketchup solved that problem for me.

I layered the chips into a large baking tray, added the mince over the top. Topped with the remains of my red cabbage, finely shredded. Then made a last minute decision to add jalapenos too – absolute perfection.

Spritzed with frylight and baked in the oven until the cheese melted, and voila! Here is my..

Ingredients

  • Potatoes
  • Onion
  • Red Pepper
  • VFC Chick*n mince
  • Oregano
  • Smoked Paprika
  • Onion Salt
  • Garlic Granules
  • Red Cabbage
  • Jalapenos
  • Cheddar cheese
  • Ketchup to serve (optional)

The ingredients have no measurements, because I was throwing things together, just working with what I had available. It tasted insanely good, which is why I had to share!

Method

  • Wash, chop and air fry the potatoes
  • Meanwhile, sauté the veg in a pan with the chicken mince and spices
  • Layer the chips on to a baking tray
  • Add the mince mixture
  • Top with shredded red cabbage for some crunch
  • Add grated cheddar
  • Top with jalapenos
  • Bake until the cheese melts
  • Try and serve without making a mess of the plate.. I challenge you!

It goes without saying that any, or all of these ingredients can be substituted with whatever you have laying around. Apart from the potatoes of course – bit difficult to make loaded fries without potatoes! Ha!
